Introduction: Enjoy the vibrant flavors of summer with these delightful Grilled Vegetable and Marinated Tofu Skewers. This recipe combines marinated tofu cubes, colorful bell peppers, zucchini, earthy mushrooms, and sweet onions, all threaded onto skewers and grilled to perfection. The tantalizing marinade, featuring a harmonious blend of olive oil, zesty lemon juice, aromatic garlic, and the unique essence of Australian bush spices, adds a burst of flavor to every bite. Whether you’re hosting a backyard barbecue or simply craving a wholesome and delicious meal, these skewers are a fantastic choice.

  • 14 oz (400g) firm tofu, pressed and cubed
  • 2 bell peppers (assorted colors), cut into chunks
  • 2 zucchinis, sliced into rounds
  • 8 oz (225g) mushrooms, cleaned and halved
  • 1 large red onion, cut into chunks
  • Wooden skewers, soaked in water for 30 minutes

For the Marinade:

  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon Australian bush spices (such as lemon myrtle, wattleseed, or pepperberry)
  • Salt and black pepper, to taste

For Serving:

  • Fresh parsley, chopped
  • Lemon wedges

Cooking Time:

  • Marinating Time: 1 to 2 hours (optional)
  • Grilling Time: 15 to 20 minutes

  1. Press the Tofu: To achieve a firmer texture and better marinade absorption, press the tofu before cubing it. Wrap the tofu in paper towels and place a heavy object on top for about 30 minutes.
  2. Soak Wooden Skewers: Soaking wooden skewers in water prevents them from burning on the grill. This step also prevents the skewers from absorbing too much moisture from the ingredients.
  3. Choose a Variety of Vegetables: While the recipe suggests bell peppers, zucchini, mushrooms, and onions, feel free to incorporate other favorite vegetables like cherry tomatoes, eggplant, or even pineapple chunks.
  4. Marinating Time: Marinating the tofu and vegetables is optional but highly recommended. It enhances the flavors and tenderness of the ingredients. Aim for at least 1 to 2 hours in the refrigerator.
  5. Grilling Technique: Preheat your grill to medium-high heat. Brush the grates with oil to prevent sticking. Place the skewers on the grill and rotate them occasionally for even cooking.
  6. Basting with Marinade: During grilling, brush the skewers with the marinade using a basting brush. This adds extra flavor and keeps the ingredients moist.

  1. In a bowl, whisk together all the marinade ingredients: olive oil, lemon juice, minced garlic, Australian bush spices, salt, and black pepper.
  2. In a large, shallow dish, place the cubed tofu and pour half of the marinade over it. Toss gently to coat the tofu. Cover and refrigerate for at least 1 to 2 hours, allowing the flavors to meld.
  3. Thread the marinated tofu, bell pepper chunks, zucchini rounds, mushroom halves, and onion chunks alternately onto the soaked wooden skewers.
  4. Preheat the grill to medium-high heat.
  5. Place the skewers on the grill grates. Cook for 15 to 20 minutes, turning occasionally, until the vegetables are tender and slightly charred, and the tofu is heated through.
  6. During grilling, use the remaining marinade to brush the skewers for extra flavor.
  7. Once grilled to perfection, remove the skewers from the grill and sprinkle with chopped fresh parsley.
  8. Serve the Grilled Vegetable and Marinated Tofu Skewers with lemon wedges on the side for an extra burst of citrus flavor.

Enjoy your delicious and colorful Grilled Vegetable and Marinated Tofu Skewers as a wholesome and delightful meal!
