In this recipe, we’ll be crafting sushi rolls filled with avocado, cucumber, carrot, marinated tofu, and other fresh vegetables. These rolls are perfect for sushi lovers who are following a vegan lifestyle or looking to explore creative alternatives to traditional sushi fillings.

Ingredients: For the Sushi Rice:

  • 2 cups sushi rice
  • 1/3 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt

For the Vegan Sushi Rolls:

  • Nori seaweed sheets
  • Avocado, sliced into thin strips
  • Cucumber, julienned
  • Carrot, julienned
  • Marinated tofu, thinly sliced
  • Bell pepper, thinly sliced
  • Spring onions, julienned
  • Sesame seeds (black and white), for garnish
  • Soy sauce, for dipping

For Marinated Tofu:

  • 1 block of firm tofu, pressed and drained
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup or agave nectar
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced

For Tempura Vegetables (Optional):

  • Assorted vegetables (e.g., sweet potato, zucchini, bell pepper)
  • 1 cup all-purpose flour
  • 1/2 cup ice-cold water
  • 1 teaspoon baking powder
  • Pinch of salt
  • Vegetable oil, for frying

Cooking Time:

  • Sushi Rice: About 30 minutes (including rice cooking time)
  • Marinated Tofu: 15 minutes (plus marinating time)
  • Assembling Sushi Rolls: About 20 minutes
  • Total Time: Approximately 1 hour and 5 minutes (excluding marinating time)

1. Prepare the Sushi Rice:

  • Rinse the sushi rice in cold water until the water runs clear.
  • Cook the rice according to the package instructions or using a rice cooker.
  • In a small saucepan, combine rice vinegar, sugar, and salt. Heat over low heat until the sugar dissolves. Do not boil.
  • Once the rice is cooked, transfer it to a large bowl. Gradually pour the vinegar mixture over the rice while gently folding it in with a wooden spatula. Allow the rice to cool to room temperature.

2. Marinate the Tofu (if using):

  • Whisk together the soy sauce, rice vinegar, maple syrup, sesame oil, grated ginger, and minced garlic in a bowl to create the marinade.
  • Cut the pressed tofu into thin slices and place them in a shallow dish. Pour the marinade over the tofu slices and let them marinate for at least 15 minutes.

3. Prepare the Tempura Batter (if using):

  • In a mixing bowl, combine the flour, baking powder, and a pinch of salt.
  • Gradually add ice-cold water while gently stirring until the batter is smooth and slightly thick. It should be thin enough to coat the vegetables but not too runny.

4. Tempura Vegetables (if using):

  • Heat vegetable oil in a deep frying pan to around 350°F (175°C).
  • Dip the sliced vegetables into the tempura batter, allowing any excess batter to drip off.
  • Carefully place the battered vegetables into the hot oil and fry until they are golden brown and crispy. Remove with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

5. Assemble the Vegan Sushi Rolls:

  • Lay a bamboo sushi mat on a clean surface and place a sheet of nori, shiny side down, on top of it.
  • Wet your fingers to prevent sticking and spread a thin layer of sushi rice evenly over the nori, leaving about half an inch of nori exposed at the top.
  • Arrange your desired fillings, including avocado, cucumber, carrot, marinated tofu, bell pepper, and spring onions, along the lower third of the rice-covered nori.

6. Roll the Sushi:

  • Lift the bamboo mat from the bottom and start rolling the nori and fillings away from you, using gentle pressure to create a tight roll.
  • Once you reach the exposed edge of the nori, wet it slightly with water to seal the roll.

7. Slice and Serve:

  • Use a sharp knife dipped in water to slice the sushi roll into bite-sized pieces.
  • Arrange the sliced sushi rolls on a plate, sprinkle with sesame seeds, and serve with soy sauce for dipping.

  1. When assembling the sushi rolls, make sure not to overstuff them, as this can make rolling difficult.
  2. Wet your hands before handling sushi rice to prevent it from sticking to your fingers.
  3. To cut clean and neat slices, wipe the knife with a damp cloth between each cut.
  4. Experiment with various fillings, sauces, and garnishes to create your unique vegan sushi rolls.

Vegan rolls provide a creative and satisfying way to enjoy the flavors and textures of sushi without the use of animal products. Whether you’re new to sushi-making or a seasoned pro, these vegan sushi rolls are sure to impress your taste buds and those of your guests!
