  • 1/2 cup ice-cold water
  • 1 teaspoon baking powder
  • Pinch of salt
  • Vegetable oil, for frying

Cooking Time:

  • Sushi Rice: About 30 minutes (including rice cooking time)
  • Marinated Tofu: 15 minutes (plus marinating time)
  • Assembling Sushi Rolls: About 20 minutes
  • Total Time: Approximately 1 hour and 5 minutes (excluding marinating time)

Instructions:

1. Prepare the Sushi Rice:

  • Rinse the sushi rice in cold water until the water runs clear.
  • Cook the rice according to the package instructions or using a rice cooker.
  • In a small saucepan, combine rice vinegar, sugar, and salt. Heat over low heat until the sugar dissolves. Do not boil.
  • Once the rice is cooked, transfer it to a large bowl. Gradually pour the vinegar mixture over the rice while gently folding it in with a wooden spatula. Allow the rice to cool to room temperature.

2. Marinate the Tofu (if using):

  • Whisk together the soy sauce, rice vinegar, maple syrup, sesame oil, grated ginger, and minced garlic in a bowl to create the marinade.
  • Cut the pressed tofu into thin slices and place them in a shallow dish. Pour the marinade over the tofu slices and let them marinate for at least 15 minutes.

3. Prepare the Tempura Batter (if using):

  • In a mixing bowl, combine the flour, baking powder, and a pinch of salt.
  • Gradually add ice-cold water while gently stirring until the batter is smooth and slightly thick. It should be thin enough to coat the vegetables but not too runny.

4. Tempura Vegetables (if using):

  • Heat vegetable oil in a deep frying pan to around 350°F (175°C).
  • Dip the sliced vegetables into the tempura batter, allowing any excess batter to drip off.
